Définition :
Chalazes : filaments en spirale, d'albumen épais, situés aux deux extrémités du jaune de l'œuf. Leur fonction, d'ordre physique, est de maintenir l'axe d'orientation au début de l'incubation, pendant le retournement de l'œuf.

The spiral strings of dense albumen seen opposite one another on the yolk of an egg. Their function is physical in that they maintain the axis of orientation when the egg is turned during the early stages of incubation. The chalaziferous layer adheres closely to the vitelline membrane of the yolk and terminates in the chalazae.
