It is an important chemical intermediate for the manufacture of such acids as malic, fumaric, tartaric, and lactic, all of which are used in the food industries, and also has application in the dyeing of textile fibers. The related compound, maleic anhydride, is still more useful, though it is quite poisonous. It is a component of various tonnage synthetic resin (polyesters, alkyds, and permanent-press types) which have a broad spectrum of uses. Malic acid, made by heating maleic acid with steam under pressure, also occurs naturally in such fruits as apples, from which the name is derived; it is also a dicarboxylic acid, formula COOHCH2(OH)COOH, but is not the same as maleic, in spite of the similarity in spelling.
