One of the most abundant fatty acids, m.p. 14 °C (57 °F), obtained from both animal and vegetable sources. It is an unsatured compound having one double bond and terminating in the characteristic carboxyl group: CH3(CH2)7CH=(CH2)7COOC. It is a reddish, viscous liquid at room temperature the 70% grade is known in the trade as red oil.
Note :
Oleic acid readily undergoes saponification and hydrogenation. Its high-volume use is in commercial soap manufacture, and it is also a component of ointment bases and cosmetic creams. It has no toxic properties. Oleates are derivatives of oleic acid comprising two types of compounds: metallic (heavy-metal) soap by reaction with lead, cobalt, manganese, etc., and esters by reaction with alcohols, e.g., glycerol.
