Définition :
Substance utilisée pour retarder la dégradation de certains produits ou matériaux causée par l'oxydation, et en assurer un meilleur vieillissement.
Note :
Parmi les oxidants les plus classiques, on relève essentiellement des mines et des dérivés phénoliques, ainsi que des dérivés soufrés ou phosphorés.

The protective effect is considered to be due to free radical mechanisms and is obtained with extremely low percentages. The maximum content of antioxidants in foodstuffs is 0.02% and some will function at a concentration of only 0.0025%. Antioxidants are added to gasoline to prevent oxidative gum formation; to natural and synthetic rubbers, in which they increase service life by a factor of from 5 to 10; and to foods to inhibit rancidity and spoilage.
Chemicals having a strong antioxidant function are phenols, arylamines, and phosphites; sulfur compounds are also effective in lubricating oils and in preservation of some fruits. Some antioxidants are naturally present in rubber and foods (in the latter, tocopherols and ascorbic acid). The discovery of the effectiveness of these additives has been largely responsible for the extended shelf and service life of these essential products.Termes :
