  Note :

  To distinguish "lamb" from "mutton", one refers to criteria of ossification, shape of bones and texture of lean. In young lambs lean is pinkish, while in adults it is dark-red. In the latter front shanks are covered by spool-joints, while in the former shanks are separated at the break joints.
