  An ester formed by an intramolecular chemical change or rearrangement in certain types of carboxylic acids containing hydroxyl groups or halogen atoms, often on evaporation of aqueous solutions. The water (or halogen compound) formed by interaction of the OH and COOH groups within the acid molecule is split out, and a heterocyclic lactone structure results. ((...)). Example are formation of butyrolactone from hydroxybutyric acid and valerolactone from hydroxyvaleric acid (these products can also be synthetized). Lactones are useful organic intermediates and flavorings. They occur naturally in some plants, where they are instrumental in odor formation.
