  Définition

  A dextrorotatory carboxylic acid found principally in the pectin group of compounds occurring in plants. The molecules are of large (colloidal) dimensions,most of the carboxyl groups being esterified with methyl groups to form so-called methoxyl units (COOCH₃). The pectin structure is composed of chains of such molecules, which provide the gelling property characteristic of these substances.
