Developments have been made in the packaging of processed cheese helpful to consumers who normally make sandwiches. The most dramatic was demonstrated in a patent awarded to Kraft in 1944 for slicing and packaging cheese continuously. In this process, the hot, melted cheese is distributed uniformly on chilled stell rollers where a wide thin mat of cheese or, alternatively, thin bands of cold solidified cheese are formed. The continuously produced strips after cooling are cut by rotary knives to consumer size and sealed eight or more slices to a package. Even without intermediary material, the slices usually do not stick together, although lecithin is permitted as an optional ingredient (0.03 percent by weight) in pasteurized process cheese products and slices to minimize sticking.
