  A bit of color may be added to provide the light yellow tone.
  
  As the seasonal change in color is objectionable to the consumer, who prefers a uniformly colored product throughout the year, butter usually is colored artificially. The shade used varies locally, but in general, the northern and eastern states prefer a light, straw color, the southern states prefer a deep yellow, and in the western states an intermediate color is most popular. In Canada, a richly colored butter is preferred.
