Botanically, a pome. The fruits vary considerably in the species as does skin colour. All have flesh which contains many grit cells, a characteristic of the genus. Sand pears are grittier than most, and their flesh is harder. Some pears are pear-shaped, others are sub-globose and apple-shaped. As may be expected, their cultivars also vary a great deal one from another. The fruits are classified according to the main shape patterns, which are: 1. Round or flattened, rough-skinned and russetted, mainly old varieties. 2. Bergamot or top-shaped, also rough-skinned and russetted, or green when ripe. 3. Conical, pears which taper but are not waisted, usually russetted, yellow or red flushed. 4. Pyriform, pear-shaped with a distinct waist, usually yellow when ripe. Among these are the choicest varieties. 5. Oval, mainly russetted and without any red colouring. 6. Calebasse or Long pears, brown or golden russet, although a few are smooth green, mainly cooking pears.
