Botanically, a multiple fruit, known in this case as an infructescence. As the individual flowers are fertilised they fuse together and join, with the bracts around them, to form a fleshy structure. The stem on which the flowers were attached continues to grow above the fruit and forms a tuft or crown of leaf-like bracts. This stem forms the hard core which runs through the centre of a pineapple. When mature the fruit differs according to variety, beginning to colour at the base and spreading up to the "shoulders". Smooth Cayenne, for instance, is a deep to copper yellow, Ripley Queen is red rather than orange or yellow, Spanish Red is a deep tone, and so it goes on, ranging from white-yellow, green-yellow, olive green, brown-yellow, orange and red-orange. The colour of the flesh also varies. Those varieties with pale flesh are often sour. The yellow and golden flesh varieties have the best flavour.
