  Cucumbers are divided into three classes: the field-grown slicing or table cukes, characterized by small white spines on the skin; the much smaller pickling varieties, also field grown; and the greenhouse varieties adapted to culture under artificial heat. Long, slender, nearly seedless European or English cucumbers fall into the third category. Mild-flavored Armenian cucumbers, similar in shape to Europeans but paler in color, are grouped with slicing cucumbers, as are Japanese and Sfran (from the Persian Gulf) varieties.
  
  Small fruits called "gherkins" are much used as pickles.
