  Cow's milk fed to infants sometimes has to be modified to match more closely the composition of mother's milk.
  
  Whole milk can be modified by certain enzymes to increase the intensity of the fat flavor. The composition of the product is the same as that of regular dried whole milk for all practical purposes. The changes occur principally in the lipids, and a similar process can be applied to butter.
