  Notes :

  A modern evaporator consists of a flue pan in which sap is concentrated about 50 % and a flat front pan where concentrated sap from the flue pan is boiled to syrup. The pans sit on top of an "arch" which is the firebox.
  
  It consists of a heavily-tinned pan, strongly made, set on an arch, which usually has a regular stove front with large doors for firing. The pans have corrugated bottoms and are partitioned off to give a zig zag course to the sap.
