  Gushing, wild, overfoaming or jumping beer, as it is variously called, is an undesirable quality in a packaged beer.
  
  In the case of gushing beer, a sudden release of carbon dioxide takes place at the instant the container is opened, creating a vast number of very minute bubbles throughout the beer volume which expand and ascend very quickly, resulting in a bursting stream of foamy beer that flows out of the container. In severe cases, more than half the content may be lost, occasionally showing a continuous spurt of 2-10 cm high. This violent gushing action usually eases after a few seconds. The terme gushing thus designates beer that foams excessively and which cannot be classified as mishandled or wild.
