(Stabilizers, in ice cream, sherbets, ices and other food products: stabilizers of Botanical Origin): Cellulose Derivatives - Sodium Carboxymethylcellulose. Sodium carboxymethylcellulose is compatible with gum arabic and tragacanth, sodium alginate, gelatin, pectin and Irish moss. Because of its compatibility with other types of stabilizers, sodium carboxymethylcellulose can be used in ice cream in combination with gelatin or gum, a whipping agent and corn sugar.
