Grana, named after its distinct granular structure and hard rinds, is the king of Italien cheeses representing about 45 percent of the total. It is large, weighing 60 to 80 pounds, and usually aged for one to two years at 15°C. The cheese, dry and hard, in its final state at 26 to 32 percent moisture is used for grating purposes.
