Defect of Emmental and other Swiss-type cheese in which the eyes are very large (120 mm or more in diameter) and in extreme cases there may be only one large hole in the centre of the cheese and the structure of the cheese is torn and deformed. It is probably caused by excessive gas production by clostridial bacteria and develops late.
