Compounds in milk containing nitrogen but no proteins. A minor component of milk, the NPN includes a large number of substances of molecular weight less than 500. These compounds pass a dialysis membrane and are not precipitated with the proteins. They include free amino acids, urea, creatine, nucleotides.
Note :
In cow's milk the concentration is 1.1-2.9 g/l. In cheeses it is higher, according to type of manufacture and the coagulating enzyme used.
